I remember as a child waking up to a cough and having trouble sleeping because of it. This of course would waken my dear mom and often she would come to my bed with a little spoon of honey, butter and a drop of eucalyptus oil. It felt so good, sweet and soothing. My cough would stop and sometimes I wanted to cough again for more of that honey and butter! But butter made my skin break out as a child and so my mom eventually cut butter out of our diet and even though we were vegetarian she was now experimenting more with a pure plant based diet.

Well, I have teen boys now, and they are a lot of fun. When they were toddlers and even now, I have followed the same plan. When a sore throat STARTS...take care of it right away. Get your feet, legs, arms, warm. Drink a hot tea. Gargle with salt water. Drink fresh vegetable juice. If someone gets a cough, take some homemade cough syrup or a spoon of honey, coconut oil and tea tree oil. Sometimes I just usehoney and a drop of eucalyptus oil, or another great one is honey and a drop of scotch pine essential oil!

So is this all quackery??? Well, a few years ago it was considered so, but not by myself! I have experienced and seen so much healing with SIMPLE, natural, harmless procedures.

Let me share something about honey and coughs from published medical literature. There have been several studies which have validated the fact that honey is indeed helpful for coughs, and studies have even verified that a spoonful of honey will help children with upper respiratory infection sleep better and reduce their coughing. -Pediatrics. 2012 Sep;130(3):465-71. doi: 10.1542/peds.2011-3075. Epub 2012 Aug 6. Parents can sleep better with honey too!! I did not need the studies, I have first hand experience! But,...for the doubting Thomas here it is!

Next time I will share a homemade cough syrup that really helps with sore throat but is especially effective with laryngitis! Beware though!! This statement has NOT been evaluated by the FDA!!! Well here are some of our bee colonies in ND. Excellent year for Clover honey! The lower box is home with the queen mommy, the second box is their food pantry for the family and all upper boxes on top of that is extra honey storage. Look at all the bees flying around in the air. They love beeing busy! The queen loves it and she is busy laying eggs for babies everyday. These busy ladies only live 3 weeks during the honey season so there needs to be a steadily growing family.

Well, I just kind of threw this together today, there are no measurements but you can figure it out and adapt. 1. Cook up your fresh Udon noodles or fresh Soba according to directions, drain, rinse with cold water, set aside. 2. Have ready a rainbow of colored veggies like carrots, peppers, onions, zucchini, bok choy or cabbage. Cut the veggies in different shapes so some are long strips, some are slices etc. If you have firm tofu, slice that up too. 3. On high heat, Sautee the onion first in water, when it is soft add some sesame oil and some extra light olive oil. Another minute or so and it should start to turn golden. Now add carrots, zucchini, tofu or other veggies, Stir a few moments cover a minute, add soy sauce (careful some add MSG), salt, and honey. Mix up a few more seconds and add your greens like bok choy. Cook just till the veggies wilt a bit, sprinkle red pepper flakes, taste for salt and honey. Should be a little sweet and just right for the salt you know? Decorate with sliced green onion and black sesame seed when you serve. I haven't done that yet on the photo because I am serving this up later. ENJOY folks. I always use honey in my asian cooking instead of sugar!

The Story: Well, on New Year's Day 2015 Andrew, our son, flew south to Guatemala on a mission trip to build a church with locals and 8 other youth from California. It was a great group and rich experience for all of them. When Andrew got home he told us of all the interesting food experiences he had including some delicious cherimoya fruit, sweeeeeet pineapple and he kept talking about this hamaica tea. Well, I figured out that meant Jamaica tea, but in english it is Hibiscus Tea. Well, I have long used hibiscus flowers in my herbal tea creations but never pure, hibiscus tea. Here is the recipe and it is a big hit with our family including 91 year old grandpa (Pampa), he LOOOOOVVVVVEEED it, of course, it has honey in it, is sweet and yummy!!! So here goes the recipe. First off, go to a mexican store and find a big bag of hibiscus flowers, dry, but ask for Jamaica tea(pronounce hamaIca tea). RECIPE Bring to Boil: 4 cups water 2 cups hibiscus flowers 1/2 Cup FLOWING GOLD HONEY!!! Simmer for 15 minutes. Cool. Strain. Add 4 cups water. Drink cool. WOW IT IS GOOD. Tastes like grape, pomegranate and cherry juice!

Molasses Cookies
1 Cup walnuts
1 1/4 cups whole wheat pastry flour
1 tsp salt
1/2 tsp ginger
1/3 cup molasses
1/2 cup honey from FLOWING GOLD
1/2 cup applesauce
1 tsp vanilla extract
1 tsp aluminum free baking pdr
1/2 walnut or pecan pieces or halves

1. Place nuts, flour, salt and ginger in food processor and blend for 1 minute until it is all fine like flour.
2. In a mixing bowl combine flour and nut mixture with remaining ingredients and mix well.
3. Using a small ice-cream scoop or spoon, place in mounds on a nonstick or lightly oiled cookie sheet, leaving a little space between cookies for them to spread out. Flatten with a wet spatula or shake the pan a bit to flatten them.
4. Bake at 350' 15-20 minutes. Let cool on the cookie sheet before serving or storing in an airtight container.

Canning Season-Honey Pickled Beets!!

Measurements not exact because beet sizes vary. I usually pull mine out of the garden when they are as big as a small orange. When they get old they are tougher, have thready fiber through them, the old ones I use for juicing, the tender, silky sweet ones I like to make borscht with, beet salad or pickle them for winter.

Have ready 4-5 sterilized quart canning jars and matching rings and new lids.

18 smallish fresh beets, boil, peel 1 C beet cooking water 1 C fresh lemon juice 1/2 C honey 1 tsp salt (if you like to add cinnamon sticks, allspice etc. you may add that to the boiling syrup and simmer 15 minutes. Then remove the cinnamon sticks and other spices before pouring into jars)

DIRECTIONS: Pull your beets out of the garden (or from the farmer's market), cut off the tops being careful not to cut into the beet itself because if you do some of the flavor will bleed out into the water while boiling. Cut the long tail off the tip but not into the beet bulb itself. Now scrub the beets clean of all dirt with a sturdy brush. Put them into a big pot and cover with 2-3" hot water. Use a bigger pot because they sputter and the red water makes a mess! Bring to boil. Simmer for about 1 hour or till the largest beet is soft when you poke it with a fork. Pour off the water but save about 1 quart of it in a jar. This cooking water will be used for canning, for this reason the beets were scrubbed diligently! Now, cover the beets but keep them off the stove. The beets will cool down and sweat in the pot so as soon as they are cool enough to handle the skin will slip off easily. You can also peel them under cold water. Working with cold water does not pull out the flavor so don't worry. After the beets are peeled you can slice them into a bowl. You can make sticks or squares or plain slices. I usually cut the beets in half and 1/4" slice. Everything these beets touch will turn pink so you may want to wear gloves and an apron.

Now pack the sliced beets snugly into the jars until full to 1/2" from the top. Get your canner ready. Now take 1 cup of the cooking liquid which you have saved, put it into a small saucepan with 1 cup lemon juice, 1/2 Cup honey, 1 tsp. sea salt, optional spices. Bring to a boil. If your canner is ready then ladle the boiling syrup over the beets to the top of the beets, leaving 1/2" headspace. Put the lids on and into the boiling water canner. Process 30 minutes. Remove and set aside for 24 hours. Check your seals and store in a cool dark place for up to a year at least if necessary.

PS If you need more syrup just make more quickly to fill up all the jars.

This summer we have added new varietals to our honey line! We have Creamy Desert Mesquite, Wildflower, also Sweet Clover is flowing right now and soon we will have our Tupelo Honey bottled! You have to try these exquisite honeys! You see every honey has a unique flavor, if a batch of honey doesn't have that single blossom flavor we are looking for then we know that the bees have a variety of honeys in their frames and that becomes a wildflower honey. All of these are good. Honey makes life sweet too!

Birthday Breakfast Crepes!

These crepes are perfect for a spring birthday or mother's day coming up soon! Spread with a bit of almond butter and your favorite fresh fruit(or jam), maple syrup and whipped coconut cream, roll up, garnish pretty and yum!

1 1/2 Cups Soy milk (I used Kirkland, vanilla)

1/2  C Quick Oats

1/2 C Whole wheat or WW Pastry flour

1 tsp. honey

1/2 tsp. salt

1/2 Cup tofu (optional)

1 tsp. Vanilla extract or some orange rind

Blend everything till smooth and creamy.

Preheat your non-stick skillet. Lift the skillet and pour about 1/4 C into the hot pan while you roll the pan gently to cover the bottom with a thin layer of batter. Use medium-high temperature until the top is dry, takes about a minute, then loosen the edges gently with a spatula and turn, cook the other side for about a half minute. Stack your finished crepes on a flat plate and cover with a cloth to keep warm. 

My mom and grandmother's would make stacks of crepes, and they disappeared quickly. When I had my plant food only (vegan) restaurant (Marline's Vegetable Patch 1984-1996) in downtown Sacramento, I experimented to make crepes without eggs and cow milk. Our guests, friends and my family love these. My son Jared had a birthday last week and of course he asked for a crepe breakfast. It is wonderful that local strawberries always come out the week of his birthday! We also love the crepes with our apricot or raspberry jam, but a bit of almond butter down the inside center is a must!!

We have incredible berry, raspberry, blueberry, strawberry, raspberry jams available already, we just don't have the pictures to post the photos, call us for the best homemade jams. Delivered to your doorstep-the jam, not the crepes yet.....maybe with amazon drones in a few years!! Can you imagine getting a meal you ordered online delivered by a drone in like 30 minutes!!!! Possible.

Queen grafting takes incredible vision! You cannot imagine how tiny these eggs are. Jenn is really fast and good at this. The most amazing thing is that a few years ago, Jenn, was legally blind. She could not see the big E on the vision charts! She was blessed with the gift of laser surgery and now she does this incredible work, so valuable. It was a great class for all of us.
