Yerba Santa Blossoms in the Foothills

Yerba Santa Blossoms in the Foothills

We went for a walk in the foothills around lake Tabeaud and found the lovely Yerba Santa in bloom. Not only do bees and insects love this plant but it is a great blessing to all of us!

Yerba Santa is an excellent healing plant. The late Dr. Eugene Watkins, my friend and a great Naturopath and Herbalist, taught me the following about Yerba Santa:

From the Spanish language we have the name Yerba Santa, or, as we would say in English "Herb Saint". This herb of the high desert mountains in the desert southwest of the US., with its gray-white miniature trumpet flowers, has long been revered by the Spanish community as a life-saving lung herb. The clean refreshing scent and taste of Yerba Santa immediately suggest the relief it affords for removing mucus, draining fluid from lungs and their restoration to normal function. Take internally, 40 to 80 drops per day, or hourly as needed for relief. This may help someone with breathing difficulties to breathe easier. I love chewing on the young leaves, then I spit out the residue. Take a drink of water and it is soooo sweet and refreshing after chewing on YS leaves!!

To your health this lovely spring! Keep praying for rain! God is good! All the time.

Veggie Udon with Tofu (and pssst, guess what else....honey!)

Today's creative yum!

Well, I just kind of threw this together today, there are no measurements but you can figure it out and adapt. 1. Cook up your fresh Udon noodles or fresh Soba according to directions, drain, rinse with cold water, set aside. 2. Have ready a rainbow of colored veggies like carrots, peppers, onions, zucchini, bok choy or cabbage. Cut the veggies in different shapes so some are long strips, some are slices etc. If you have firm tofu, slice that up too. 3. On high heat, Sautee the onion first in water, when it is soft add some sesame oil and some extra light olive oil. Another minute or so and it should start to turn golden. Now add carrots, zucchini, tofu or other veggies, Stir a few moments cover a minute, add soy sauce (careful some add MSG), salt, and honey. Mix up a few more seconds and add your greens like bok choy. Cook just till the veggies wilt a bit, sprinkle red pepper flakes, taste for salt and honey. Should be a little sweet and just right for the salt you know? Decorate with sliced green onion and black sesame seed when you serve. I haven't done that yet on the photo because I am serving this up later. ENJOY folks. I always use honey in my asian cooking instead of sugar!

Benefits of the Hibiscus Flower

I came to love this beautiful flower the first time I went to Brazil in 1981. It grows everywhere and cheers up the city and the countryside. Bees love this flower but our buzzing ladies never get to taste this nectar because it is a tropical plant. I want to share with you the tremendous benefits of this flower and therefore the benefits of hibiscus tea.

THIS IS FROM DR. MICHAEL GREGOR, MD:

HIGH BLOOD PRESSURE IS WHERE HIBISCUS MAY REALLY SHINE, A DISEASE AFFECTING A BILLION PEOPLE AND KILLING MILLIONS. UP UNTIL 2010, THERE WASN’T SUFFICIENT HIGH QUALITY RESEARCH OUT THERE TO SUPPORT THE USE OF HIBISCUS TEA TO TREAT IT, BUT WE HAVE SINCE SEEN RANDOMIZED DOUBLE-BLIND, PLACEBO-CONTROLLED STUDIES WHERE HIBISCUS TEA IS COMPARED TO ARTIFICIALLY COLORED AND FLAVORED WATER THAT LOOKS AND TASTES LIKE HIBISCUS TEA, AND THE TEA DID SIGNIFICANTLY BETTER.

WE’RE STILL NOT SURE WHY IT WORKS, BUT HIBISCUS DOES APPEAR TO BOOST NITRIC OXIDE PRODUCTION, WHICH COULD HELP OUR ARTERIES RELAX AND DILATE BETTER. REGARDLESS, AN UPDATED REVIEW ACKNOWLEDGED THAT THE DAILY CONSUMPTION OF HIBISCUS TEA MAY INDEED SIGNIFICANTLY LOWER BLOOD PRESSURES IN PEOPLE WITH HYPERTENSION, BUT BY HOW MUCH? HOW DOES THIS DROP IN BLOOD PRESSURE COMPARE TO THAT OF OTHER INTERVENTIONS?

THE PREMIER CLINICAL TRIAL WHEN IT COMES TO COMPREHENSIVE LIFESTYLE MODIFICATION FOR BLOOD PRESSURE CONTROL IS THE PREMIER CLINICAL TRIAL. REALIZING THAT 9 OUT OF 10 AMERICANS ARE GOING TO DEVELOP HYPERTENSION, THEY RANDOMIZED 800 MEN AND WOMEN WITH HIGH BLOOD PRESSURE INTO ONE OF THREE GROUPS. ONE WAS THE CONTROL GROUP, THE SO-CALLED ADVICE ONLY GROUP, WHERE PATIENTS WERE JUST TOLD TO LOSE WEIGHT, CUT DOWN ON SALT, INCREASE EXERCISE AND EAT HEALTHIER, HERE’S A BROCHURE. BUT IN THE TWO BEHAVIORAL INTERVENTION GROUPS THEY GOT SERIOUS. 18 FACE-TO-FACE SESSIONS, GROUPS MEETINGS, FOOD DIARIES, MONITORED PHYSICAL ACTIVITY, CALORIE AND SODIUM INTAKE. ONE INTERVENTION GROUP JUST CONCENTRATED ON EXERCISE AND THE OTHER INCLUDED EXERCISE AND DIET. THEY PUSHED THE DASH DIET, HIGH IN FRUITS AND VEGETABLES, AND LOW IN FULL-FAT DAIRY PRODUCTS AND MEAT. AND IN SIX MONTHS THEY ACHIEVED A 4.3 POINT DROP IN SYSTOLIC BLOOD PRESSURE, COMPARED TO THE CONTROL, SLIGHTLY BETTER THAN THE LIFESTYLE INTERVENTION WITHOUT THE DIET. NOW A FEW POINTS MIGHT NOT SOUND LIKE A LOT—THAT’S LIKE SOMEONE GOING FROM A BLOOD PRESSURE OF 150 OVER 90 TO A BLOOD PRESSURE OF 146 OVER 90—BUT ON A POPULATION SCALE A 5 POINT DROP IN THE TOTAL NUMBER WOULD RESULT IN A 14% FEWER STROKE DEATHS, 9% FEWER FATAL HEART ATTACKS, AND 7% FEWER DEATHS EVERY YEAR OVERALL.

AND A CUP OF HIBISCUS TEA WITH EACH MEAL DIDN’T JUST LOWER BLOOD PRESSURE BY 3, 4 OR 5 POINTS BUT BY 7 POINTS, 129 DOWN TO 122. AND IN FACT TESTED HEAD-TO-HEAD AGAINST A LEADING BLOOD-PRESSURE DRUG, CAPTOPRIL, TWO CUPS OF STRONG HIBISCUS TEA EVERY MORNING, USING A TOTAL OF 5 TEA BAGS FOR THOSE TWO CUPS, WAS AS EFFECTIVE IN LOWERING BLOOD PRESSURE AS A STARTING DOSE OF 25MG OF CAPTOPRIL TAKEN TWICE A DAY.

WHEN YOU DRINK THIS TEA REMEMBER IT IS HIGH IN VITAMIN C, THEREFORE ACIDIC, TO PROTECT YOUR TEETH AFTER ENJOYING THIS TREMENDOUS HEALTHY BEVERAGE SWISH WITH PURE WATER TO RINSE YOUR MOUTH. DO NOT BRUSH YOUR TEETH FOR 30 MINUTES AFTER EATING OR DRINKING ACIDY FOODS/BEVERAGES, JUST RINSE FIRST. THIS WAY YOU BENEFIT FROM HIBISCUS, LEMON ETC. BUT PROTECT YOUR TEETH AS WELL, AND OF COURSE BUILD A HEALTHY IMMUNE SYSTEM AND BLOOD VESSELS. OH, WHAT A BLESSING TO HAVE ALL THESE WONDERFUL FOODS FOR HEALTH AND HEALING!!! YES, YES!

MY OWN NATUROPATHIC MENTOR, THE LATE DR. E. WATKINS HAD THIS TO SAY ABOUT HIBISCUS: HIBISCUS CONTAINS ASTONISHINGLY LARGE AMOUNTS OF TWO VALUABLE TRACE MINERAL ELEMENTS, CHROMIUM AND SELENIUM. WHILE IT IS TRUE THAT MANY SEA VEGETABLES DO CONTAIN THESE TRACE ELEMENTS AS WELL, NO OTHER SINGLE HERB HAS BEEN FOUND WITH LEVELS AS HIGH FOR THESE TWO VITAL TRACE ELEMENTS COMBINED, AS IN THE FLOWER PETALS OF THIS SPLENDID TROPICAL AND SUB-TROPICAL FLOWER. IN ORDER FOR US TO TOLERATE AND USE THE GLUCOSE (BLOOD SUGAR) NORMALLY PRESENT IN OUR BLOOD STREAM, CHROMIUM IS NEEDED SO THE NERVES AND BRAIN CAN FUNCTION PROPERLY. THE BODY MAKES A SUBSTANCE WITH CHROMIUM IN IT CALLED GLUCOSE TOLERANCE FACTOR. WITH THIS THE BODY CAN THEN PRODUCE AND USE THE HORMONE, CORRECTING THE DIS-EASE CONDITION KNOWN AS SUGAR DIABETES. THE TRACE ELEMENT SELENIUM FUNCTIONS MUCH LIKE THE OIL-BASED BITAMIN COMPLEX KNOWN COLLECTIVELY AS VITAMIN E, WHEN IT COMES TO DESTROYING HARMFUL CANCER CAUSING COMPOUNDS IN THE BODY, KNOWN AS "FREE RADICALS". SELENIUM DOES THIS BY PROTECTING THE GENETIC MACHINERY OF THE CELL NUCLEIUS OR "CELL HEADQUARTERS", WHEN IT IS IN THE PROCESS OF DIVISION TO FORM NEW BODY CELLS. SELENIUM ALSO CORRECTS HEART AND CIRCULATORY DIS-EASES BY PREVENTING THE BREAK DOWN OF THE CIRCULATORY SYSTEM.  THAT DOC WATKINS WAS A WISE MAN!

OK FOLKS, THAT'S IT FOR TODAY, SEE YOU AGAIN NEXT TIME, UNTIL THEN GOD BLESS YOU ALL!

Andrew Introduces us to a New Favorite!

Tasty Hibiscus Tea

The Story: Well, on New Year's Day 2015 Andrew, our son, flew south to Guatemala on a mission trip to build a church with locals and 8 other youth from California. It was a great group and rich experience for all of them. When Andrew got home he told us of all the interesting food experiences he had including some delicious cherimoya fruit, sweeeeeet pineapple and he kept talking about this hamaica tea. Well, I figured out that meant Jamaica tea, but in english it is Hibiscus Tea. Well, I have long used hibiscus flowers in my herbal tea creations but never pure, hibiscus tea. Here is the recipe and it is a big hit with our family including 91 year old grandpa (Pampa), he LOOOOOVVVVVEEED it, of course, it has honey in it, is sweet and yummy!!! So here goes the recipe. First off, go to a mexican store and find a big bag of hibiscus flowers, dry, but ask for Jamaica tea(pronounce hamaIca tea). RECIPE Bring to Boil: 4 cups water 2 cups hibiscus flowers 1/2 Cup FLOWING GOLD HONEY!!! Simmer for 15 minutes. Cool. Strain. Add 4 cups water. Drink cool. WOW IT IS GOOD. Tastes like grape, pomegranate and cherry juice!

Tomorrow I will share with you why your body NEEDS Hibiscus tea! You may even save someone's life, by sharing what I will share with you. So listen up tomorrow, or rather, read up....... Sweet honey dreams tonight to all!

Andrew came home from mission trip and told us about this delicious beverage!

Canning Season-Honey Pickled Beets!!

Preserving Beets

Measurements not exact because beet sizes vary. I usually pull mine out of the garden when they are as big as a small orange. When they get old they are tougher, have thready fiber through them, the old ones I use for juicing, the tender, silky sweet ones I like to make borscht with, beet salad or pickle them for winter.

Pickled Beets are so yummy any time!

Have ready 4-5 sterilized quart canning jars and matching rings and new lids.

18 smallish fresh beets, boil, peel 1 C beet cooking water 1 C fresh lemon juice 1/2 C honey 1 tsp salt (if you like to add cinnamon sticks, allspice etc. you may add that to the boiling syrup and simmer 15 minutes. Then remove the cinnamon sticks and other spices before pouring into jars)

DIRECTIONS: Pull your beets out of the garden (or from the farmer's market), cut off the tops being careful not to cut into the beet itself because if you do some of the flavor will bleed out into the water while boiling. Cut the long tail off the tip but not into the beet bulb itself. Now scrub the beets clean of all dirt with a sturdy brush. Put them into a big pot and cover with 2-3" hot water. Use a bigger pot because they sputter and the red water makes a mess! Bring to boil. Simmer for about 1 hour or till the largest beet is soft when you poke it with a fork. Pour off the water but save about 1 quart of it in a jar. This cooking water will be used for canning, for this reason the beets were scrubbed diligently! Now, cover the beets but keep them off the stove. The beets will cool down and sweat in the pot so as soon as they are cool enough to handle the skin will slip off easily. You can also peel them under cold water. Working with cold water does not pull out the flavor so don't worry. After the beets are peeled you can slice them into a bowl. You can make sticks or squares or plain slices. I usually cut the beets in half and 1/4" slice. Everything these beets touch will turn pink so you may want to wear gloves and an apron.

Easy to can these!

Now pack the sliced beets snugly into the jars until full to 1/2" from the top. Get your canner ready. Now take 1 cup of the cooking liquid which you have saved, put it into a small saucepan with 1 cup lemon juice, 1/2 Cup honey, 1 tsp. sea salt, optional spices. Bring to a boil. If your canner is ready then ladle the boiling syrup over the beets to the top of the beets, leaving 1/2" headspace. Put the lids on and into the boiling water canner. Process 30 minutes. Remove and set aside for 24 hours. Check your seals and store in a cool dark place for up to a year at least if necessary.

PS If you need more syrup just make more quickly to fill up all the jars.

ENJOY!!!

All of these are good. Honey makes life sweet too!

From the Garden, pollinated by the bees....

Birthday Breakfast Crepes!

These crepes are perfect for a spring birthday or mother's day coming up soon! Spread with a bit of almond butter and your favorite fresh fruit(or jam), maple syrup and whipped coconut cream, roll up, garnish pretty and yum!

1 1/2 Cups Soy milk (I used Kirkland, vanilla)

1/2  C Quick Oats

1/2 C Whole wheat or WW Pastry flour

1 tsp. honey

1/2 tsp. salt

1/2 Cup tofu (optional)

1 tsp. Vanilla extract or some orange rind

Blend everything till smooth and creamy.

Preheat your non-stick skillet. Lift the skillet and pour about 1/4 C into the hot pan while you roll the pan gently to cover the bottom with a thin layer of batter. Use medium-high temperature until the top is dry, takes about a minute, then loosen the edges gently with a spatula and turn, cook the other side for about a half minute. Stack your finished crepes on a flat plate and cover with a cloth to keep warm.

My mom and grandmother's would make stacks of crepes, and they disappeared quickly. When I had my plant food only (vegan) restaurant (Marline's Vegetable Patch 1984-1996) in downtown Sacramento, I experimented to make crepes without eggs and cow milk. Our guests, friends and my family love these. My son Jared had a birthday last week and of course he asked for a crepe breakfast. It is wonderful that local strawberries always come out the week of his birthday! We also love the crepes with our apricot or raspberry jam, but a bit of almond butter down the inside center is a must!!

Check out our other edibles for the best almond butter and soon you will see our excellent jams. We have incredible berry, raspberry, blueberry, strawberry, raspberry jams available already, we just don't have the pictures to post the photos, call us for the best homemade jams. Delivered to your doorstep-the jam, not the crepes yet.....maybe with amazon drones in a few years!! Can you imagine getting a meal you ordered online delivered by a drone in like 30 minutes!!!! Possible.

Jenn, Queen Grafting

ANDREW, our son, preparing artificial queen cels for Jenn to do the grafting. We are learning cool stuff here!

Jenn is the queen grafter.

Jenn pulling out the 3 day old egg, the tiny white tip on the end of her tool.

Dropping the egg in the artificial queen cell cup.

Bees working too!

Placing the grafted queen cells in a nuc hive for the young nurse bees to rear.

Queen grafting takes incredible vision! You cannot imagine how tiny these eggs are. Jenn is really fast and good at this. The most amazing thing is that a few years ago, Jenn, was legally blind. She could not see the big E on the vision charts! She was blessed with the gift of laser surgery and now she does this incredible work, so valuable. It was a great class for all of us.

Heavy Gold

Look at this little lady's heavy gold bags(hanging on her legs). She does not work for Brinks! This is pollen collected from flowers, carried on the bee's legs. The pollen is stored in cells just like honey. It is used to feed the brood. It is an excellent source of amino acids (protein building blocks). Pollen is also what gives many people hay fever and allergies. Strengthen your immune system. Sneezing, watery eyes, is an overreaction to pollen in the air.
